It is a variety of blonde onion, with a flattened shape and very sweet flavour, which makes it suitable for the preparation of delicious culinary specialties where it is served stuffed.
Tradition involves sowing the seed at Santa Caterina (26 November), transplanting between the end of April and the first days of May.
An old popular adage suggests special precautions to follow: "The onion says: when transplanting, just cover my beard if you want it to become large".
Biodiversity safeguarded by 'guardian farmers', in 2016 the Municipality of Avigliana, with a resolution, approved the production specifications and the blonde, flat onion of Drubiaglio was certified with the De. C.O. Municipal Designation of Origin.
