Autumn is traditionally the season of mountain cheeses because it is the time when the cheeses made during the summer pasturing of cows reach the correct stage of aging.
Since there are still numerous mountain huts within the Protected Areas of the Cottian Alps where cheese is produced, the Park Authority pays special attention to the promotion of this specific product of the Alpine tradition, through the Typical Cheese Parks Cottian Alps brand created to support local businesses. Specifically, the cheeses produced within the boundaries of the protected areas, made with raw milk from cows grazing the alpages of the Cottian Alps Parks and aged for at least 60 days, are stamped with a specific hot brand that guarantees quality and place of origin. This is therefore the time when the work of branding becomes active and promotion begins through fairs, tastings, and sector events.
